Recipe for Cauliflower, Your Kids and Family Will Eat/LOVE

Do you like curry? Do you like cauliflower? I wasn’t a fan of cauliflower until I discovered this way of roasting it to eat. Now I cook and serve it monthly! The reason why I started eating more curry and cauliflower, in addition to some other diet additions, was that I had developed ovarian cysts and through research found these to be natural remedies. Chicken and Curried Cauliflower Or Curried Cauliflower. This recipe is so delicious. You can roast up the cauliflower by itself for a quick veggie side. Just follow the directions below for making and preparing cauliflower, leaving out the chicken.

What you need:
1 Whole Chicken 4-6lbs
1-3 limes, slice thinly
chopped cilantro
olive oil (we use extra virgin olive oil)
salt (optional, we don’t use)
1-2 heads of cauliflower, break into desirable floweret size
yellow curry powder

To Make:
Prepare cauliflower:
Take cauliflower and break into desirable floweret size
Wash well
Put cauliflower into a large bowl
Pour a little salt and olive oil over the top and mix to coat
Sprinkle desired amount of curry over cauliflower and mix to coat
I love curry so I go way overboard but everyone loves my recipe no matter how much curry I pile on, including my son and used-to-be picky eater husband
Put back into fridge and prepare chicken
If you only want to eat cauliflower as a side veggie, then place curried cauliflower into a roaster or baking dish,place in oven, 400F, for 1-2 hours. Take out, baste, and toss 1x-2x while cooking. I cook mine for at least 2 hours because I like the tops of the cauliflower to get browned and a little crispy.
Preheat oven to 400F

Prepare Chicken:
Chicken: wash & pat dry
Without tearing the skin, gently separate the skin from the chicken and insert desired amount of lime slices all over the chicken; leg, breast;squeeze a couple over the chicken and the remaining slices in the chicken cavity.
I then stuff cilantro, under the skin, around the limes
Rub olive oil all over the skin of the chicken (and salt if desired)
Put the chicken in a large baking dish or roaster breast side down
Take cauliflower out and place around the chicken in the baking dish or roaster
Cook for 30-45 minutes

After 30-45minutes
Turn chicken over so breast is facing upward
Optional, add a little more olive oil to top, legs, wings of chicken. I like to baste the cauliflower and chicken with a little olive oil 1x or 2x while cooking.
Roast for another 30-45+/-minutes
I always use a cooking thermometer to help determine when meat is cooked perfectly
Cover with foil or roasting top if chicken is browning too fast (I like mine pretty browned so I never cover with foil)
Chicken is finished when thermometer reads 175-180F

    Dear Momto8blog, Totally agree, I have a zillion roasted chicken recipes. Some better than others, like this cauliflower recipe, but pretty much you can never go wrong! Do you have a fav recommendation?
